Sushi Night is back!!! Everyone is impressed when you make sushi. They’ll never know you cut out most of the carbs! Rachel and I love it. We make this as an appetizer for family dinners. We take it to Cookouts. And, We just plain have it for dinner. It is quick and easy to make. This Alpha Sushi Recipe is a sneaky way of bringing low carb food to the party. I have demonstrated the Alpha Shrimp Sushi Rolls below.
This recipe is very versatile. Rachel does not like raw fish, so we use cooked Shrimp or sashimi style crab legs. You can use the meat of your choice. Salmon, Tuna, Imitation Crab are all traditional and great. We like Cucumber and Crazy Good Fermented Carrots with Avocado or Guacamole in our rolls. You can use the veggies of your choice. I like to add Fermented Veggies where I can.

Proteins: Shrimp
Veggies: Crazy Good Fermented Carrots, Cucumber
Healthy Fats: Guacamole, Cream Cheese
Alpha Sushi Ingredients
3oz Cooked Shrimp
Nori
1Cup Cooked Cauliflower Rice
1TBSP Crazy Good Fermented Carrots
Cucumber
Guacamole
3oz Cream Cheese
1TBSP Apple Cider Vinegar
2tsp Garlic Powder
2tsp Ginger Powder
Wasabi
Pickled Ginger
Soy Sauce
2tsp Salt
1tsp Pepper
Alpha Sushi Recipe: Sticky Rice
Cook the Cauliflower Rice
I use a Steamable Bag of Riced Cauliflower
While still hot:
Add Cream Cheese
Add Apple Cider Vinegar
Add Garlic Powder
Add Ginger
Add Salt
Add Pepper
Stir Well

1 Nori Sheet
Place Shiny Side Down
Put Creases same direction as Bamboo
Spread “Rice” all the way to the Edge on Both Sides and Bottom
Stop 1/2″ from the Top
Chop the Cooked Shrimp
Place it From Edge To Edge Like Pictured
Add Fermented Carrots
You can use Veggies of your choice
Julienne Cut Cucumber
Add Cucumber
Add Guacamole
You can use Avacado Slices
I like Guac with Shrimp to help hold it together
Wet the top edge of Nori with water to help it stick
Roll Sushi from the Bottom up
Refrigerate for an hour
Cut into 9 Rolls
Top with Soy Sauce, Wasabi, Pickled Ginger to Taste
