Try this cheese. Alpha Queso Recipe is a low Glycemic Index Food recipe. Cottage Cheese is high in Casein Protein which is a slower Protein to absorb. Cottage cheese has had the whey protein removed, so it is the perfect base for a healthy queso kitchen hack. You can make low carb tacos, burritos, quesadillas and bowls or use it as a dip or topping for almost anything! I love cheese, but realize that most dairy is high in whey protein. Whey Protein is absorbed so quickly that it causes an insulin spike.
I eat a lot of Mexican flavored dishes. So, this is a fun addition to the fridge. It’s a sneaky way to get all that protein.

24 oz Cottage Cheese
1 Taco Seasoning Pack or Homemade
1/2 cup Cheese
Optional
2TBSP Fermented Jalapenos
2TBSP Fermented Salsa
Homemade Taco Seasoning
In A Bowl Add:
Cumin
Chili Powder
Onion Powder
Garlic Powder
Sea Salt
Paprika
In a Blender Add:
24 oz Cottage Cheese
1 Taco Seasoning Pack or Homemade
1/2 cup Cheese
2TBSP Fermented Jalapenos (Optional)
Note
I no longer Microwave for 15 seconds (2X’s)
It’s too easy to overheat. Cottage Cheese will Curdle. I skip this step.
