Alpha Egg Salad

When Ethan went to college and I was visiting him for the first time, I asked what food he wanted me to bring.  Ironically, I had already made it, because I knew his answer.  It was Alpha Egg Salad.  For him, I add sliced Red Beets.  🙂

This is a monthly staple at our house.  Inexpensive, Convenient, Sweet, Heat, Creamy.  Combination of Eggs, Pickled Red Beet Eggs, Sweet Spicy Tuna and Crazy Good Fermented Carrots for a delicious sandwich salad.  This tasty treat is loaded with Protein, Fat, Good Cholesterol and Fermented Goodness.  My kids love it on some low carb bread.  I enjoy mine in a Keto soft taco shell.

This is a true game changer for egg fans.  Eggs are highly nutritional including all the essential amino acids.  I consider them a  super food.  Think about it.  An egg has everything in it to sustain life.  Try this egg salad straight up on a spoon, over a bed of lettuce, in a romaine leaf or on a keto taco shell.  I’ve never had a better egg salad.

Alpha Egg Salad Ingredients

  • 12 Large Eggs
  • 6 Pickled Red Beet Eggs
  • 2 Packs Sweet Spicy Tuna
  • 1.5 Cups Mayonnaise
  • 1/4 Cup Sweet Relish
  • 1/4 Cup Fermented Carrots w/ Ginger and Turmeric
  • 1tsp Salt
  • 1tsp Pepper

Alpha Egg Salad: Eggcelent Hard Boiled Eggs

  • Use your favorite method
  • I use the Instant Pot 5-5-5 Method
    • All the Eggs peel easy every time
  • Put 12 Eggs in Instant Pot
    • I use white store bought Eggs
    • I think they peel easier
  • Add 1-2 Cups Water

  • Close Lid
  • Set Timer for 5 Minutes
  • Let Pressure Natural Release for 5 Minutes

  • Drain Water
  • Put Eggs in Ice Bath for 5 Minutes
  • Remove shells

Alpha Egg Salad: Part 2 Assemble Eggcelence

  • Peal the Eggs
  • Rinse off all pieces of shell
  • Slice the Eggs with an Egg Slicer in both directions
  • Put them in a large mixing bowl

  • Slice the Pickeled Red Beet Eggs in Both Directions

  • You should have big pile of diced eggs

  • Add Fermented Carrots
    • You can use Veggies of your choice
    • Onions, Celery, Carrots are all good
    • Our Fave is one of the above and red beets

  • Add Sweet Relish
    • You can use the same amount of chopped pickles

  • Add Tuna
    • You can use plain tuna or any other flavored  pouch that you like.

  • Add Mayonnaise
    • You can use light mayonnaise or Greek Yogurt

  • Stir Well
  • Be sure to incorporate all the tuna
  • Store in a glass container w/ a tight lid
  • Refrigerate up to 5 days
