Alpha Creamy Cole Slaw w/ Bacon

I love adding this creamy cole slaw to my meals.  It goes great with my tacos.  I have packed it full of flavor and even added some protein.  The Cole Slaw dressing uses Vanilla Protein Powder in place of sugar.  I use Crazy Nutrition Vanilla Protein Shake.  It is low in calories and has no sugar.  My carrots are Crazy Good Fermented Carrots that include Ginger and Tumeric.  Delish!  Remember, our goal is to eat foods that are very low on the Glycemic Index Food Chart.

When doing the Lion Diet I recommend finding a meal that works and repeating it.  I call my “usual” meal an Alpha Power Bowl.  In a bowl I start with Alpha Refried Beans.  They are topped with meats, veggies, sauces, eggs.  This can be eaten as a bowl or on keto tortillas.  I like to take my Beans, Meat, and Sauces and top it with Alpha Creamy Cole Slaw for a power taco.

Alpha Creamy Cole Slaw Ingredients

  • 1 Small Head of Cabbage shredded
  • 5 Strips of Thick Cut Bacon
  • 1 Cup Mayonnaise
  • 1 Cup Plain Greek Yogurt
  • 1 Scoop Vanilla Protein Powder
  • 1/4 Cup + 2 TBSP Apple Cider Vinegar
  • 1/2 Cup Crazy Good Fermented Carrots
  • 2 tsp Salt
  • 2 tsp Black Pepper

*For low calorie and higher protein, use no mayonnaise and 2 cups of greek yogurt.

First make the Creamy Cole Slaw Dressing.

Combine w/ Whisk

  • Mayonaise
  • Plain Greek Yogurt
  • Apple Cider Vinegar
  • Vanilla Protein Powder
  • Salt
  • Pepper

It is Thick and Creamy.  But you should be able to stir it.  It should be slightly thinner than a pancake batter.  If it is too thick, add a tablespoon of Apple Cider Vinegar.  If you have a big head of lettuce, you will need to double this dressing recipe.  I usually double the dressing recipe and cook extra bacon and use the left over to make a Creamy Bacon Vinaigrette. 

NEXT

Cook your bacon.  I bake mine in the over at 400F for 12 minutes.  You can microwave or fry the bacon if you prefer.  I render most fat and get it crispy.  It falls apart as I cut it.

Add and Stir

  • Cabbage
  • Carrots
  • Bacon
  • Dressing

Refrigerate for at least an hour to let the flavors blend together.  I always recommend a glass container.

Store in a glass container with a tight lid for up to 7 days.  

Optional:  You can fold in your favorite Fermented Veggies or chili powder to taste.  My favorite is Crazy Good Fermented Carrots, but you can try them all.  It’s Crazy Good!!!
