If you are following the Lion Diet, then you know that I eat a lot of Mexican inspired dishes. But tonight, its Italian Night!! This Chicken Cacciatore dish is delicious, satisfying and low on the Glycemic Index. For our beans…say hello to Chickpea Pasta. Its a game changer. Get the pasta with one ingredient, chickpeas. In this recipe, I use Boneless, Skinless Chicken Thighs for the Chicken. I find its the tastiest and easiest to cook. You can use whatever chicken your prefer. I have even used ground chicken. This recipe makes 8 servings for me.
The healthiest cultures around the globe consume large amounts of beans. That is the first green flag. Beans are high in Fiber and many other nutrients. Green Flag 2. This bean dish will take you to Italy. I have fun with food. You will too with this recipe. You get to use several cooking techniques, and its Delish!
When doing the Lion Diet I recommend finding a meal that works and repeating it. I call my “usual” meal an Alpha Power Bowl. The Alpha Power Bowl is my standard meal on the Maintenance Lion Diet plan. This meal checks all the same boxes and is just as good. This meal just takes a bit more cooking. It is still loaded with my beans topped with meats, veggies, sauces, eggs. This can be eaten as a dish or on keto tortillas.
I make this very often. It is a much easier “sell” to my kids for getting beans into their diet. I hope you enjoy this quick and easy recipe as much as I do.

How to make Alpha Chicken Cacciatore with Chickpea Pasta Recipe:
Alpha Chicken Cacciatore with Chickpea Pasta Ingredients
- 4lbs B/S Chicken Thighs
- 8.8oz Box Chickpea Pasta
- 28oz Can Tomato Sauce (no added sugar)
- 1/4 Cup Olive Oil
- 1 Cup Onions
- 1 Cup Peppers
- 2 Carrots Sliced
- 1 small Squash
- 1 small Can sliced Olives
- 2 Cups Spinach
- 2 TBSP Italian Seasoning
- 1 TBSP Parsley
- 2 TBSP Garlic Powder
- Seasoned Salt to Taste
- 1/4 Cup Salt
- 2 tsps Black Pepper
Set your oven at 350F. Get a pot of water boiling, Salt the water. How to know if the water is salty enough: The water should taste like sea water. I recommend reading all the instructions first. This is not a short and simple recipe. It is healthy and delicious and worth the effort; however.
Next
Cook the pasta according to the instructions on the box. Mine was 7 minutes. It cooks faster than regular pasta. Do not over cook. It will cook a little more at the end of the recipe. When it’s done, drain the water and set the pasta to the side to add later.
For this recipe, I am baking my chicken. I use a roasting pan, so it catches all the juices. Season 1 side of the chicken with Seasoned Salt. If you don’t have Seasoned Salt, use salt and paprika. Bake the chicken until it is 165F internal temperature.
You can grill, air fry, use left overs or cook the chicken in the dutch oven and remove. You also can use any meet that you like. Shrimp is awesome. I use this recipe for Sausage and Peppers.
In a Dutch Oven on Medium Heat:
- Add Olive Oil
- Carrots
- Onions
- Peppers
- Squash
Cook until the onions are opaque. Do not over cook. They will continue to cook as you assemble the dish. You can use whatever veggies you want. Green Beans are a great legume to add as well. Don’t use corn or potatoes.
Next Add:
- Tomato Sauce
- Italian Seasoning
- Parsley
- Garlic Powder
- Add Salt & Black Pepper
- Add Olives
Let this simmer on low heat for 5 minutes or until the chicken is done. Be sure to stir it.
When chicken is done, remove it from the oven and pour all the juices in the pan with the veggies and tomato sauce. Stir it. It may look like too much liquid at first, but it isn’t. The noodles will absorb it at the end.
If you are using grilled or left over chicken, add a cup of chicken bone broth.
Next:
- Add the Chicken
- Stir
It will continue to simmer. You can see the the sauce is much thinner in this picture from the pan juices. If it stops simmering, turn the heat up to Medium. You can slice your chicken or keep it whole. I like to slice mine.
Next:
- Add the Chickpea Pasta
- Stir
- Turn off Heat
Finally:
- Add Spinach
- Stir it all really well
- Top it with an Over-Easy Egg
You can see the Pasta absorbed the excess liquid.
Option: Stir in a cup of cottage cheese. Cottage cheese is a low Glycemic Index Food and legal on the Lion Diet. I use it like it’s Ricotta Cheese.
If you are making a dutch oven full for yourself, it is better to be a bit on the saucy side. It’ll dry out more in the fridge. I keep a bottle of low sugar spaghetti sauce around…just in case.
I like this on a keto tortilla. I add Crazy Good Fermented Jalapeno Hot Sauce and Crazy Good Fermented Salsa.
This can be refrigerated for 7 days in a glass container with a tight lid.
